I live vicariously...Remember the days when you could eat whatever you want with a smile, a happy belly, and no guilt. :)  We went to a birthday party last Friday, and there was the most adorable little girl indulging in my daily food fantasies, chowing down on hotdogs and cupcakes.  And doesn't she look so cute doing it. :)

Food: Thai Peanut Chicken Chopped Salad

Okay.. so I thought I'd do a food photo and recipe entry. This is one of my favorite salads and it photographs pretty well. It is my version of CPK's Thai Crunch Salad.

This is for 1 dinner serving and it is huge and roughly 520 calories. Or you can cut it in half and have it for 2 lunches.

Thai Peanut Chopped Chicken Salad Recipe:

Chicken Breast Chopped 1/2 cup (I usually buy the rotisserie chicken from Lynardi's)
Cabbage 1 1/2 cups (I like the shredded/chopped trio cabbage pack that includes green and red cabbage and carrots)
Carrots 1/2 cup shredded
Cucumber 1/2+ cup chopped
Cilantro 1/4 cup chopped
Chive 1/8 to 1/4 cup chopped
Red Pepper 1/2 cup chopped
Sesame Seed 1 TBSP toasted/roasted (I usually buys these pre-toasted)
Peanut Halves 1/4 cup chopped
Trader Joe's Spicy Peanut Vinaigrette salad dressing 1/4 cup (in refrigerated section near lettuce at Trader Joe's); (Sometimes I will mix 1 part Trader Joes Cilantro dressing 2 parts Spicy Peanut Vinaigrette dressing if I don't feel like chopping cilantro and/or I want to reduce the calories a little so I can add Edemame.)
ADD 1/4 cup Edemame for an ADDITIONAL 60 Calories
